“During my early days at Olive in New Delhi, I sometimes found it disheartening to work on Sundays. While we were hard at work, we would witness guests enjoying a lavish Sunday brunch. Families and groups of youngsters would revel in their leisurely afternoon while we, the chefs, waiters, and managers, dedicated ourselves since early morning to ensure that their restaurant experience was exceptional. Although sacrificing family time was challenging, in retrospect, we take pride in the progress we have made and the valuable experiences we have gained.”

“One particular memory from working in the hospitality industry stands out for me: When I had to work extensively, juggling a national-level competition alongside my regular duties, I endured a grueling work stretch of 52 hours without rest. Initially, I felt it was a bit harsh for my senior chefs to place me in such a situation. However, they encouraged me to focus on the competition after my shifts were over.

Consequently, I spent two sleepless nights, passionately preparing for the competition while fulfilling my work responsibilities during the day. This experience taught me invaluable lessons about managing mental pressure alongside physical demands. It strengthened me, and now I approach the kitchen with confidence, ready to tackle any challenge, whether it involves cooking for long hours or multitasking my way through my various responsibilities.”
